I believe it was @Jess who mentioned a gluten-free diet relieving previously life-long symptoms which my girlfriend suffers from, which reminded me that my girlfriend and her mother (and various other blood relatives) have an allergy to wheat.

So I thought, what if they don't have a wheat allergy? WHAT IF IT WAS THE GLUTEN ALL ALONG?!?!

It's a lot cheaper to just not eat gluten than to go to a doctor and get tested, so I suggested to my girlfriend that we go gluten free for a couple weeks to test my theory. She fell for my evil plan, and agreed to go gluten free, so long as I was the cook (I'm the cook anyway).

So I made soups and stir fry and cooked fish and chicken. I gave her whatever she wanted, so long as it was gluten-free. After all, we wanted to test for gluten, not the other potentially harmful elements of her diet.

...the thing is, I was only taking gluten out.

I forgot to replace the bread and crackers with rice and corn alternatives.

It wasn't until almost a week in that she was nearly crying while explaining how hungry she was. I had accidentally put her on the Atkin's Diet...which is to say, first-world starvation.

There was much remorse, and also potatoes. And also rice. And also corn.

Yesterday was the 14th day of our field study, and it turns out that just cutting gluten out fixed all of her digestive problems (except permanent physical damage already done).

TL;DR Don't starve your girlfriend while trying to do experiments on her.

This is a very interesting concept that most people don't think about regarding food allergies. Most people that state they are allergic to gluten, don't even know what it is... and many people with wheat allergies don't understand it could like just be gluten... Bravo on being an awesome boyfriend.

Yeah, it's fascinating, isn't it, how close nutrition is to everything else. I can eat like a boss, but if there's bread involved, my fingernails and skin are absolute shit. Take the wheat out and all of a sudden I have great nails, even though everything else is exactly the same.

 

And yes, don't do atkin's! You gotta at least replace the carbs with either more carbs or fat.

@Jess whoa, I hadn't even considered my own skin issues. I've suffered from eczema and psoriasis since childhood, but I haven't had any skin problems recently...HMMM. Could be coincidence, but I'd love if this simple change in diet fixed my supposedly incurable skin problems!

I didn't initially go gluten free to fix anything, I did it to prove my mom wrong. She said if a GF diet helped autistic people, it'd help me not be as much of a moody bitch. and ofc I was like HA I'LL SHOW YOU. And a week later, the rash that covered my hands since 2000 disappeared. I eat crackers and it comes back. I was still kind of bitchy, but my panic attacks and anxiety went away too

Huh, that's really interesting. I don't see how gluten would impact autistic people any more or less, but I'm glad it helped you =)
