I can choose from the LG Chat, Motorola Defy or the HTC Status. I know little about phones, so if someone could suggest one of the three for me. I'm just looking for something basic that can call, text (with relative ease), and browse the web...and preferably with little lag with the touch screen. Suggest one and say why, thanks in advance.

Get the Motorola Defy. Its a lot better phone than both of the other phones,not only specification wise, but its a better built phone. It's also waterproof/dustproof/shock proof.

The Status is a shitty gimmick phone and the Chat is just mediocre. So the Defy would be your best option, but it looks like you're getting it anyways.
