Entry #1:
Homemade Burgers
Ingredients:
400g Steak Mincemeat
Worcestershire Sauce
3 Spring Onion/Scallions
Salt
Pepper
1 clove of Garlic
1 Egg
White Bread
Cheese
4 Burger Baps
Step 1:
Using a cheese grater, grate up 2 slices of bread into an oven dish
Place this into an oven at a medium heat for 5 mins
Take out of the oven and let the bread crumbs cool down
Step 2:
Place the mincemeat into a bowl. Put the egg yolk only into the bowl. Put 1 table spoon of Worcestershire Sauce (or any brown spicy sauce). Crush the garlic into the bowl. Put your bread crumbs in the bowl and season well with salt and pepper. Now crop up the Spring Onions and put into the bowl.
Step 3:
Using your hands mix and knead the mixture well for a good 5 mins until the mixture is formed into 1 large ball.
Step 4:
Using your hands make 4 balls out of the 1 and roll each in your hand to form a round ball then press hard bottom and top to make a burger shape.
Step 5:
Place the burgers on a plate in the fridge for at least 30 mins, taking out 5 mins before cooking to let the meat relax.
Step 6:
Heat up the grill to a medium heat and place burgers under the grill and cook each side until golden brown and sizzling.
1 mins before serving place your cheese on the burgers and place under the grill for 30 seconds.
Step 7:
Place burgers in the buns and season with a touch of salt and any addtions such as sauce/relish/salad you wish and eat!!

SIMPLE SUMMER FRUIT SALAD
1) Fresh cantaloupe, grapes, honeydew, and pineapple
(I use half of a cantaloupe, honeydew, and pineapple. + 2 cups of grapes)
3) Cut everything minus the grapes into small/medium pieces.
4) Put into a big bowl & add a half teaspoon of lemon juice.
5) Add a 1/2 cup of apple cranberry juice (or whatever juice you like)
6) Add a pinch of sugar.
7) Stir until all the fruit is covered in the juice.
8) Add whip cream for extra yummy-ness
9) ENJOY!

Bread dough:
3 cups all purpose flour with 1/2 cup butter and 1/2 teaspoon salt. add water bit by bit until it comes off the sides easily (makes 30)
Butter dough:
1 cup butter and 1/2 cup all purpose flour, divide in 4, coat container in oil then chill for an hour. Divide butter ball in two, then take some water dough and roll it into a ball just big enough to wrap the butter dough ball. Press slightly and use it to "eat" the oil ball, pulling the sides up to wrap it. Mend the holes as they appear. Pat down to a somewhat smooth surface, flatten and roll out lengthwise. If it sticks, refrigerate and try again later. Do not use dry flour. Cut rolled out dough in two, roll it up like a spring roll. flatten again lengthwise. Then roll up again. Divide into 4 along its length. Lay it down spiral facing up and roll it flat. Wrap cooled filling, taking care not to puncture it in the process. For a sideways puff, fold the pastry over and crimp the sides, pressing hard with the tips of your fingers, fold it inwards again just to seal it for sure. For a ball puff, roll your filling into a ball (you might make a mess, reserve this technique for thick, dense fillings) then bring the sides of the flattened pastry around it and wrap it carefully, bake it smooth side up so that the ugly bits from making it into a ball are hidden at the bottom (this technique greatly benefits from paper cups if baking)
The filling can be up to the individual but i highly recommend: Potatoes and carrots, stir fried with lots of garlic and onions. Salt and pepper to taste. Cheese, tomatoes, hard boiled egg and basil/coriander chopped up coarsely (no specifics, it's supposed to be easy to make). Then you can seal the filling either by pinching the sides and folding them inwards as I have done, or pulling the sides up around the filling and making balls (like in the blog). As for cooking, deep frying till golden brown for crunchy or light brown for chewy. Alternatively, bake it at 180-200 degrees celcius in the oven for a healthier alternative.

Jello Cake
This cake is light and cool, perfect for a day out by the pool!
Ingrediants:
- White cake mix (This can be your own recipe or a box mix from the store. I used Pillsbury Super Moist White Cake Mix. I prefer the way it turns out!)
- One box of your favorite Jello (I use two so I can make my cake half one flavor and half another. It looks really cool in the center where the colors mix!)
- Cool Whip
- Fresh Fruit (Optional, of course, but it adds a nice touch!)
Instructions:
- Prepare the cake as the instructions direct you to on the box, or follow your own personal recipe.
- After the cake has finished baking, allow it to cool completely.
- Once cooled, take a fork and poke holes generously across the top of the cake. Be sure to have the fork touch as close to the bottom as possible as this will help pull the jello into the cake.
- Once completed, set the cake aside.
- Prepare jello as the box instructs. (Boil one cup of water, add the packet of Jello powder and stir until completely dissolved, then add one additional cup of water and stir until well blended.)
- Now take the prepared Jello and pour generously over the top of your cake! (If you used two boxes of Jello, you can mix them together, or pour over the cake however you please! Be creative!)
- Place cake in the refridgerator to allow the Jello to set. (About six hours.)
- Once the cake has set, remove from the refriderator and cover with as much or as little Cool Whip as you please. Don't forget to garnish with your favorite fruit!

15-Minute Salmon Carbonara
-Because summer food should full of flavor and color, but leave you time to play outside!
1 box (12oz) colorful pasta, like Trio Italiano by Garden Delight, for a serving of veggies in each meal!)
2 cans (or 10 oz) of salmon
1 jar (15 oz) Carbonara sauce
.25 cup roasted red pepper in oil (about half a pepper)
3-Cheese Parmesan (for garnish and taste).
Prepare pasta as directed.
Meanwhile, flake salmon into a bowl and add carbonara sauce. Mix well.
Pulse pepper in food processor. (If you use a fresh pepper, add 1 tbsp oil before pulsing).
On top of a serving of pasta add 1/2 cup of salmon mixture, a spoonful of red pepper, and sprinkle with parmesan cheese.
You now have a flavorful, eye-catching dish that will taste amazing, look like you spent all day on it, but was sooo easy! Happy Summer!
