I like to play the game at full screen mode. I believe this will help you as you may not see a potato when it comes out, especially if a non-potato object is in front of it, travelling at the same speed.
Playing the game
What I do is, lok at all 4 sides of the screen. Then I choose either to count potatoes coming in or going out. I find it easier to count potatoes coming in. So looking at all 4 sides, you count the potatoes coming in, not the potatoes going out so you don't miscount.
Also, try grouping the potatoes up, this way, you could count faster. i.e. Try counting to 50 in ones, then try to count to 50 in twos. The second time is much faster.
Entering in the score
Remember, you are given 15 seconds to enter the score. Always double check that you have entered the correct number. If you really can't remember what count you were at, use the infomation below to guess what the score could be.
Round 1 - 6-10
Round 2 - 9-15
