How do I find out what plants I need though? I tried going to other users stalls and it asked me to input a search term and I have no idea what to search for xD

Look at the recipes to see which ones you need

You have to click on them in the inventory and teach them to your villager, then go to the career page and click on the recipe

OK I can make no sense of it. I am a doctor, have learnt a recipe but can't find where I am meant to get the ingredients from to practice and the FAQ part isn't helping me

Doctor's use plants that Herbalists grow

You can grow them yourself by having a villager with the Herbalist career or purchase the plants you need from other players via stalls http://furvilla.com/stalls/search
