I think I would choose depending on the region. Cubone for Kanto, Mareep for Johto, Swablu for Hoenn, Hippopotas for Sinnoh, Minccino for Unova, or Skiddo for Kalos!

Like I know you can't start with him but starting with Charmander was my absolute fav thing to do in leafgreen
