Right, I think it's about time I learnt a general method for subtraction. Would anybody like to help?

Long subtraction is the term I associate with column subtraction, and other similar methods.
Like 'long division' (or less commonly, long multiplication/addition).

oh, if you mean subtracting two numbers that have more than one digit, this is the method we were taught back in elementary:

but then, by the end of high school, they usually don't give you numbers that you have to manually work with by hand on paper, you usually use a calculator
