Would, for example, surfing the web, playing videos on Youtube, having Steam open, etc. affect my AB buy times?

When I AB I always have multiple things running. Sometimes I'm downloadin movies/tv shows (severeal at the same time), other times I'm watching stuff or even running streaming programs, listening to music, severeal MO things open (word, excel, whatever). I never noticed all that affecting Abrosia or any of the other programs. But maybe I never paid much attention?

Internet speed and computer specifics play a role. If you're streaming hopefully you have relatively fast internet because if not it could interfere with the haggle/OCR speed rate. You should be fine for the most part. I'm sure you'll know when your system is using up too many resources and cut back.
