[The Cookie Dragon]

Does anybody have an oatmeal bread recipe? Preferably with yeast, not baking soda/powder. Those taste funky to me.

I know this is probably one of the weirdest post requests you guys have ever seen, but I'm getting desperate. I've tried a whole snotload I found online, and a couple of them are okay, but I'd like to find a better one. (Actually, one of them was ungodly tasty, but it took FOR-EV-ER to make. I don't have two days to devote to two loaves of bread! If I had more bread pans, maybe... but it's still a LOT of work.) Bonus points if it's easy!

Oatmeal Bread

3/4 c. boiling water
1/2 c. old fashioned rolled oats
3 T. margarine
1/4 c. honey
1 t. salt
1 envelope active dry yeast
1/4 c. very warm water
1/2 t. sugar
1 egg
2 c. flour
3/4 c. oat bran

Stir together boiling water, rolled oats, honey and salt. Let cool till warm. Sprinkle yeast over the very warm water in 1 cup container. Add the sugar. Stir and let stand about 10 minutes or until bubbly.

Add yeast mixture, egg, 1 1/2 c. of the flour and oat bran to oatmeal mixture. Beat at low speed 2 minutes while gradually adding the rest of the flour.

Put dough into loaf pan sprayed with Baker's Joy. Cover with wax paper and towel and let rise in warm place till it doubles in bulk (about 45 minutes).

Bake at 375 degrees for 1 hour.

I've seen a recipe mod out there for IPB. I don't know if we as a board are that interested in cooking but I thought it was interesting .

Also, it's nice to see that all sorts of topics come up on codex ... even requests for recipes . I think I'll pass this one on to some of my family...in case they want to try it .
