They offer different freezings; one for whole body, one for just head, and one for just brain. Would it work in theory(post mortem) for the brain then with the antifreeze since there aren't any bones ?

Yeah I just find stuff like this interesting. Once a person dies and is frozen, as you said all the freezing would lead to a lot of damage. If the person is frozen while alive they will die and then said damage will occur anyways.
