So, this topic might be directed to share your best/favorite recipes, so we can try them and comment if it was a fail or if it ended up being really good xD I'll teach you one of the best Brazilian food(or sweet), its called Brigadeiro and its pretty good! Now lets take a look on ingredients:

Ingredients

1 condensed milk can
1 soup spoon of butter or margarine
3,5 or 4 soup spoon with chocolate powder
1 recipient that can go on microwave(probably a bowl)
a microwave(lol)

Mixing everything together
  • In the recipient, mix all the ingredients. First the butter, then the condesed milk and the chocolate powder. Stir it until it looks close to homogenous
  • Take to the microwave for 3 minutes in high "power"
  • Stir for a while, its probably liquid right now
  • Put it on the mic again, this time for 4 mins. Keep watching, because depending on the bowl it might leak (it grows a little bit)
  • Stir a lot now, stir like there's no tomorow
  • Wait a few minutes(Like 15-30)
Congrats, you're done!
Now you just need to grab a few with a spoon or put some in a plate, just take care, because if you eat too much at once you'll get sick of it...

That's my recipe, I've learned it from my family, and taught to a few friends who asked for it, its really really good.
If you're patient you can anoint your hand with butter, make small balls and roll them on sugar or granulated chocolate(I dont even know if I typed it right or if this exists in your country), its really good, but its too much work D=. You can do it for birthday parties though, everyone loves it...
See you another time, if I ever learn another brazilian recipe I'll try to teach you! (I'd probably learn from my grandma, who's an excellent cooker xD)
Whenever I do it again I'll take pictures so you can see it step by step xD

Does it have to be a dessert? I adore ricotta based gnocchi (or gnudi) with a really simple tomato sauce.

    Ricotta Gnocchi

    Ingredients:

1 16-oz container whole milk ricotta (Part skim works okay too)
    1 large egg
1/2 cup finely grated Parmesan or pecorino cheese
    1/2 teaspoon salt
    3/4 - 1 cup flour

    Directions:
    1. Strain the ricotta: Place some coffee filters/cheese cloth/paper towels in a strainer, set it in a bowl, and dump the ricotta in. Let it drain for about an hour. I've sped up the process by squeezing, but you get better results by letting it sit. Less messy too.
    2. In a large bowl, mix the ricotta, egg, cheese, and 3/4c flour until everything is blended. Cover and refrigerate for 15 minutes.
    3. Check the dough - it should be tacky, but not overly sticky. If it's too sticky (like bubble gum) add 1tbsp flour, mix, and return to the refrigerator for an additional 15 minutes. Repeat until you have the right consistency.
    4. Put a large pot of water on the stove to boil and add 1tbsp of salt.
    5. Dust your hands and workstation with flour. Break off a chunk of dough (~tennis ball sized) and start rolling it out into a log (it makes me feel like I'm playing with play-doh again!)
    6. When it's about 3/4" thick, take a sharp knife and cut it into 3/4" pieces. They'll look like little pillows. For the authentic grooved look, roll them over the back of a fork - I'm too lazy for this step personally.
    7. Put on a baking sheet and toss with flour to prevent sticking. Roll and cut the rest of the dough in the same way.
    8. Put about half of the gnocchi in the pot (don't overcrowd it - I'll do up to 4 or 5 sets if my pot is too small)
    9. Stir gently to prevent sticking. When the gnocchi rise to the surface, let them cook for an additional 2 minutes then fish them out with a slotted spoon.
    10. Toss with sauce and serve immediately.

    (Source: http://www.thekitchn...-gnocchi-051370)

    Sauce:

Use any sauce you like but this is my personal favorite for the gnocchi

    Ingredients:

1 28oz can of diced or crushed tomatoes
2-3 garlic cloves (or more if you love garlic)
    2tbsp olive oil
    1/2 tsp sugar

    Directions:

    1. Sweat the garlic in the oil over low heat (5-7 minutes, don't let it burn)
    2. Add the tomatoes and the sugar
    3. Turn up the heat to medium low
    4. Cook for 15 minutes (or until hot, if you're impatient.)

Love the idea behind this thread, I'm always stuck for things to make for dinner and although cake probably isn't the best way forward I'm really hopping to see some more savoury recipes - the Ricotta sounds amazing!

My favourite thing to cook, which is fairly simple would be a mushroom risotto. I don't use an exact recipe anymore, as I've changed it over time but this one is pretty similar, although I don't add wine very often:

    Ingredients
    Preparation method

Soak the mushrooms in hot water for 10 minutes, then drain well. Heat the oil in a large, heavy based saucepan and add the onion and garlic. Fry over a gentle heat for 2-3 minutes, until softened. Add the mushrooms and fry for a further 2-3 minutes, until browned.

Stir in the rice and coat in the oil. Pour in the wine and simmer, stirring, until the liquid has been absorbed. Add a ladleful of the stock and simmer, stirring again, until the liquid has been absorbed. Continue adding the stock in this way, until all the liquid has been absorbed and the rice is plump and tender.
Roughly chop the soaked mushrooms and stir into the risotto, along with the parsley, butter and salt and pepper. Serve with freshly grated Parmesan.

I have two rules for cooking: If there is garlic in the recipe, or if I feel it would be better with garlic, I triple or quadruple the amount of garlic it calls for. 3 cloves? How about 9? :D Garlic breath is my friend X3 Though there's an old wives tale that if you remove the little sprout core from the cloves, it reduces garlic breath and the bitterness. I always do that, and it seems to work. I think the sprout things contain more of the undesirable compounds than the rest of the clove.
Second rule is, if it has vanilla extract, add an extra tablespoon or two. It's always better that way! I don't understand it!

Anywho, I'll post more of my favorite recipes later. I love cooking~

    i'm a fan of garlic too /azn not that extreme though O__________O;
its miraculous how vanilla extract is so good added into things.
but so disgusting on it's own

    Decadent Chocolate Cake

    Ingredients
    • 1 tbsp instant coffee
    • 1 cups hot water
    • 250g butter
    • 200g chopped dark cooking chocolate
    • 2 cups caster sugar
    • 1 1/2 cups self-raising flour
    • 1/4 cup cocoa
    • 2 eggs, lightly beaten
    • 2 tsp vanilla essence
    Directions
    • Melt butter in large saucepan over low heat. Stir in coffee and water. Add chocolate and stir until melted. Add caster sugar and stir until smooth.
    • Mix in sifted dry ingredients with electric beater. Add and beat eggs one at a time. Add vanilla.
    • Lightly grease and line a cake tin. Bake at 150°C for 1 1/2 hours or until a skewer comes out clean. Stand for five minutes before turning out.
    Notes
    -
Be careful not to beat the eggs too much or too little, else the cake will sink.
    - Make sure your cake tin isn't too deep, else your cake will burn on top.

Me Hearty Fish'N Potatoes - Preheat 400 degree cooking 30 minutes or less

1 lb fish fillets (2 fillets), fresh or frozen placed in a 2-qt baking dish.

    Big enough to fit. Break them if needed. Then combine in a saucepan or bowl the following;

1 small can of cream soup (corn, potatoe, shrimp, celery), 1 Tbsp. each of chopped green onion, horseradish

1/4 tsp. paprika & Spoon sauce over fish

Using frozen hash browns, arrange potato rounds on top.

Could be enough for 4, I usually share with one other person.
