store bought eggs (in North America) need to be kept refrigerated because the bloom which is a protective coating on the egg is washed off. Farm fresh eggs are usually kept at room temperature only because they are unwashed and the membrane layer keeps both good and bad bacteria out. Mixed feelings about that. I'd rather wash them and put them in the fridge because they can get pretty dirty.
When they lay the eggs they are wet with bloom and it eventually hardens. You can tell what color eggs a hen will lay by the color inside their ear holes and chick hatcheries get away with selling easter eggers (lay mixed green eggs) as Ameraucanas (lays true blue) by fucking intentionally mislabeling them as 'Americana' it's a really big deal keep your mongrel fucking chickens stop LYING TO US.
