One of my favorite simple meals to make is Eggs, Mushrooms and Cheese.
Fry the Mushrooms for 5 minutes with some olive oil.
Drop a couple eggs on top, mix.
Add some cheese, and let it melt.
Season.
Done.
It's so freaking good.

Never had a mouse ear in my mouth, I wouldn't know.
My fiancee thinks they feel like she is chewing rubber.

Peanut butter and jelly is one of the simplest things in the world, but I just love it. We have a family friend who owns a farm and gives us the jam she makes. The jam is so delicious and it works so well with our Peanut/cashew butter.

Home made jam is just the best! I've fallen in love with PB n J's ever since I started working by myself again. So easy, and cheap, and tasty.

All my favorite simple meals involve a crock pot.
Easiest is this:
- Chicken
- Salsa
- 3-4 hours on high, 6-8 on low.

It is. Works with both chicken breasts or thighs. I've ran both in the past depending on what was on sale.
I've got another recipe, "Take-Out, Fake-Out". The recipe is here: http://www.tablefort...ccoli-crockpot/
Shit's delicious as fuck. I added more beef, gave it more time, and shredded it after the 8-10 hours. Didn't cut it up beforehand, it's got enough time in the slow cooker to sort out it's problems. When I shredded it I added the cornstarch and frozen broccoli florets. I served over rice. Protein dense, decent amount of fiber, and awesome.

There's actually a kind of mushroom we call (at least translated ) 'mouse ears'
For my favorite meal, I always go back to stir fry. Frozen mixed veg + chicken + (I like basil) = fast and yurmy meal

I like to make pulled barbecue chicken.
Ingredients :
1 or 2 chicken breasts
Garlic Salt, Regular Salt, and pepper.
You're favorite BBQ sauce.
2 Forks.
Directions :
Fill a pot with water, bring it to a boil (enough water for the chicken to submerge.)
Once boiling, put in salt and pepper, then the chicken. Garlic salt if you like it.
Do whatever you want for 20-30 minutes, or until the chicken is white all the way through.
Take it out, stick one fork in it to hold it, then just scratch the chicken with the other fork so it makes pulled little strings and do both chickens like that.
Put in bowl, mix in BBQ sauce.
Put on stove to heat to desired level.
Enjoy!

I second this. If you need more fat, add cream cheese in the last hour. Too chickeny? Add a can of corn.
Or chicken and a bottle of bbq sauce in the crock pot.
Stovetop lasagna, stovetop chicken ala king, unstuffed peppers, and stovetop ranch chicken. None of those are particularly healthy, but they're all fast.

Make some chicken, shred the chicken. Mix chicken, shredded cheese, salsa, this nice quesadilla seasoning from McCormick and whatever else you want in a bowl. Place on tortilla. Cover with another tortilla. Put in oven for a little while. Eat.
I also like chicken and yellow rice with peas.
Egg sandwich. Just egg, bacon or ham, cheese on toasted bread.
Pasta with four cheese rosa sauce and chicken.
Chcken caesar salad with chickpeas.
Chickpeas everything.

One of my favorites is garlic snap peas. Put some olive oil in a pan, add snap peas and chopped garlic and pan fry it together. Once I added some mango salsa to the mix and it came out really well.
