What's icebox cake?

You poor soul! 

Icebox cake is like wafers and whipped cream cake. Sometimes it includes ice-cream. It's always served cold or chilled and it's strictly no-bake. I'm not a fan of the texture of traditionally baked cakes. Think like a chocolate pudding pie, or something similar. But usually with layers.

This one looks really good.I like usually graham crackers and making my own chocolate whip cream. But there are so many variations and options.

Cake box mix? The horror.
I'm so glad that's not really a thing here. I've tried it once and, compared to a fully homemade cake, it's awful. The taste is bad, the consistency is bad, even the smell is bad. Poor America :(

For the cream cheese glaze I just chucked cream cheese, icing sugar, vanilla extract and a bit of milk together until it reached the consistency I wanted.

I've been making these nz christmas pavlovas since 2014 and not just for christmas XD
I just cut some leaves into holly leaf shape since we don't have them in nz :p

I was craving something sweet and had some apples that had spent way too long in the fridge so I made an apple upside-down pudding cake. Yum.

In my family, Icebox Cake is graham crackers layered with chocolate pudding (cook and serve only, no instant!). We make whipped cream to top with but we don't put it over the whole thing.

 

I'm on a mug brownie kick right now (because I'm being lazy):

 

In a (fairly large) mug, whisk together:
1/4 c four

1/4 c sugar

2 T cocoa

Pinch of salt

Cinnamon (optional)

 

Add:

1/4 c water

2 T oil

Vanilla (to your tastes)

 

Mix

 

Microwave 1 minute (can vary depending on your appliance).

I like to make sugar cookies, but with whole wheat flour instead of all purpose. I find that they come out much better that way.

ommg @tammyisbored those look sooooo amazing

 

i love baking and cooking 

i love doing anything in the kitchen

 

last year i experimented with making choc chip and gingerbread cookies and this russian apple cake called sharlotka for christmas to bring to my boyfriends family dinner, everyone loved it all haha

 

ive been making lots of healthy baking recipes lately

last two things i made were zucchini fudge brownies and avocado fudge brownies (dairy and gluten free)

i never take photos of anything i make cos the lighting is horrible and it just doesnt do justice to in comparison to what everything tastes like

 

i was a little disappointed when i first made the avocado brownies because they were SOOO mushy inside when they first came out, but one night in the fridge did wonders they are so fudgy and yummy now :)

 

next time i bake something ill make sure i take photos to share it with you guys

Ooo I've been wanting to experiment with some zucchini choc recipes, I was debating between muffins and brownies. How did the brownies come out? Did you prefer the avocado or zucchini? :D

they are both very yummy

i would describe the zucchini to be less fudgy. they were quite nice and moist for a few days but towards the week mark they started to get a bit dry

avocado is definitely super fudgy and moist and chocolaty ill see how they go when they get close to a week old (if i dont eat them all by then)

I can't really say which one i prefer more but i can say that both of them taste better with walnuts!!

Haha I never wear pants when I bake, or anytime around the house really, but I might make an exception :p

They also tasted amazing! I'll see if I can dig up some more baking pics, I usually forget to take them before starting to eat and ruining the cake :(

Tried another recipe this week and I loved them :)
 


Ingredients
 
3/4 cup butter (1/2 cup browned, 1/4 cup added later)
1/2 cup sugar
3/4 cup brown sugar
1 egg plus 1 egg yolk
1 tbsp vanilla
2 cups flour
1 tsp baking soda
Chocolate chips
 
Instructions
 
Brown 1/2 cup butter.
Remove from heat and add 1/4 cup butter, stirring until melted.
Add sugar, brown sugar, 1 egg, 1 yolk and vanilla.
Whisk.
Let batter sit for 5 minutes.
Whisk.
Let batter sit for 5 minutes.
Whisk.
Let batter sit for 5 minutes.
Whisk in flour and baking soda.
Add chocolate chips (add as many as you want… a handful, half a bag, the whole bag…whatever! I use about 3/4 of a bag, usually).
Bake at 375 degrees for 9-11 minutes.
 
Notes: The whisking and letting the batter sit is REALLY important. I tried this recipe without doing that and they didn’t come out as good :(
