We made some clotted cream a couple of weeks ago, does that count? :p

Hell of a time finding unpasteurised cream though, we had to settle for a mix of ultrapasteurised and buttermilk.

Just out of curiosity, why ultra-pasteurized? I thought ultra was the worst stuff for homemade milk products.

(also, it makes my mozzarella not come out right. The rennet fails)

We couldn't find any that wasn't ultra-pasteurized :(  That's the only reason we used it.  But we found a dude online that adds buttermilk to his ultra-pasteurized creams and that seems to work well, so you might try that for your mozzarella?

I suggest "frozen delicious science" or some amalgamation of that.

Such as things like

Taste Experiments
Eco-Cream (you'll get plenty of hippies)
Dots of the future (risking a lawsuit?)
Deep Fried Milk/cream/ice (Makes no sense, but sounds delicious anyways)

Wait. You actually expected someone to give you a working and excellent name? No one is going to give you a fucking name to use. I good name is worth a significant amount of money in most industries. I gave you decent concepts to use, and its up to you to come up with a real name based on that, or just not even bother since you asked for help. We already came up with our name. It's totally unrelated to your "decent concepts", most likely because you seem to use "decent" as a synonym for "shitty".

(And, you'll note in the first post, I didn't expect anyone to come up with a good name.)

 

I'm not sure what industry you're talking about here, but I guarantee that artisan ice cream is most emphatically not a billion dollar anything.

Hey gais

 

So we made a tamarind-lime-ginger sorbet which was to die for last week.  Seriously.  It could have been a little stronger on the ginger but it was -hamazing-

 

This week we remade the chocolate orange sorbet and it was even better than the last one *drool*

 

In other epicurean news, last night we had lemon-garlic-parsley chicken drumsticks with roasted butternut squash, cabbage and parsnips.  This morning I made a bananas foster bread pudding omghadfkghl

 

I really need to start a food porn thread to post pictures of all the yummy awesomeness that I/we come up with, hmmm ^_^

We did try making a pineapple ham sorbet a couple months ago.  It was ok, not that great.  We'll probably revisit it to tweak it and make it better at some point, it's not very high on the list of priorities though.
